Today is Mexican Independence Day and in honor of this historic day, I’m bringing you a refreshing take on the Bloody Mary in the form of an adult slush cocktail. Meet the Spicy Cool Slush Cocktail. It’s a refreshing blend of cucumbers, cilantro, jalapenos, limes, Clamato juice and vodka.
The Spicy Cool Slush – Makes 1 Cocktail
½ c. chopped cucumbers
5 cilantro leaves
2 oz. Jalapeno-Infused Smirnoff No. 21 Vodka*
1 large lime, juiced
¾ oz. simple syrup
1 oz. club soda
¼ c. Clamato Juice
Cucumber, sliced (for garnish)
Cherry Tomatoes (for garnish)
Cilantro Leaves (for garnish)
Sliced Jalapeno (for garnish)
Muddle chopped cucumbers and cilantro in a cocktail shaker. Add in the jalapeno-infused Vodka, lime juice and simple syrup. Shake to combine flavors. Double strain. Add about a cup of ice to a blender, add in the strained cocktail, club soda and Clamato Juice. Blend until smooth. Add more ice if needed to make it thick like a slush. Garnish with a skewer of sliced cucumber, sliced jalapeno, cilantro leaves and a cherry tomato.
*To make the Jalepeno-Infused Vodka, take the amount of vodka you’ll need for your guests, add in a few slices of jalapeno and let infuse for a few hours, up to overnight. NOTE: The longer the jalapeno infuses in the vodka, the hotter the vodka will be.
I can’t get over how refreshing this cocktail slush actually is. It’s the perfect combination of coolness and heat. And would make a great gameday beverage!
