We’ve been having Spring-like temps in Texas as of late and well, it has me itching to start buying the herbs and bulbs and annuals to spruce up the boring winter yard. I actually just planted some bulbs last weekend and cannot wait until they start popping out of the ground!! I also picked up some Mint and Chocolate Mint in that same shopping trip. National Chocolate Mint Day is happening soon, and what better way to celebrate than with this refreshing Raspberry Chocolate Mint Mojito! I think the Mojito is going to be my new favorite drink. It’s just super refreshing without being overly sweet. Now on to the drink…
Ingredients
8 chocolate mint leaves (more for garnish)
1 Tablespoon of Simple Syrup (recipe below)
6 Fresh Raspberries (more for garnish)
Juice from 1 lime (more for garnish)
2.5 oz. Captain Morgan White Rum
Club Soda
Ice
Directions
In a high ball glass, add the mint leaves, simple syrup, raspberries and juice from 1 lime. Muddle together for 20 seconds.
Add ice to the glass, pour in the rum and stir.
Top off with the Club Soda.
Garnish with a slice of lime, a few mint leaves and a couple of raspberries.
