I’m back with another delicious moonshine recipe that I think you are going to love!! If you are a fan of coconut, then this Frozen Toasted Coconut Moonshine will be right up your alley. Coconut milk, mint simple syrup, lime juice and moonshine all combine together for a tasty summer drink! Don’t forget to check out my other moonshine recipes before you leave!! On to the recipe!
I created this moonshine recipe from a mutual love of mojitos and coconut. And since summer is almost upon us, I felt that creating a frozen blend would be a fun twist!! I think the toasted coconut on the rim gives it some added spunk. Not sure how to toast coconut? Turn your oven on to 325? F, add some coconut flakes, spread evenly, on some parchment paper. Toast for 3 minutes and then gently stir around. Toast for about another 3 minutes, this time keeping watch on the coconut flakes. They’ll toast up quickly and begin to burn!
FROZEN TOASTED COCONUT MOONSHINE
Ingredients:
Mint Simple Syrup:
1 cup water
1 cup sugar
Handful of mint leaves, washed & dried
Cocktail:
6 oz. moonshine (I used Texas Moonshine)
2 cups coconut milk
all of the Mint Simple Syrup from above
Juice of 2 limes
2-4 cups of ice (depends on how thick you want the beverage)
mint leaves, for garnish
toasted coconut flakes, for garnish
To make the Mint Simple Syrup:
In a small pot on the stove, bring the water, sugar and mint leaves to simmer until the sugar dissolves. Remove from heat and let it steep until the liquid cools off.
To make the cocktails (makes 3-4 drinks)
Add the coconut milk, cooled off mint syrup, juice of the limes, moonshine and ice to a blender. Blend until smooth.
Use a little coconut milk to wet the rim of your glasses and then dip them in some toasted coconut flakes. Serve your drinks and garnish with some mint sprigs.
