Summertime is still here and one of my girlfriends and I like to get together for Sunday Fundays. Just hanging out, sometimes we’ll cook meals and sometimes we’ll just have light snacks. And sometimes we like to celebrate living with some bubbly! Recently I decided our bubbly needed to be taken up a notch or too by floating some fruit ice pops. It’s a great way to keep the champagne cold and add some fruity sweetness to the drink. It’s like an instant champagne cocktail aka Champagne Ice Pop Floats!
You can go store-bought for your fruit ice pops if you are in a pinch for time or you can create your own fruit ice pops using ice pop molds and your favorite ice pop recipe! I did a combination of the 2 for our recent Sunday Funday.
First up was freezing Orange Juice. That’s it. 1 ingredient ice pops. And instant Mimosas! Well…Champagne Ice Pop Float Mimosas. 😉 We had more Andre Champagne in our glasses than ice pops so it wasn’t a true Mimosas but it was definitely Mimosas inspired!!
The second recipe I tried was taking Pineapple Juice and mixing it with Coconut Milk for a Pina Colada flair. The ice pop itself was good, but when the Andre Champagne hit the coconut milk part of it got a bit weird to look at. LOL But it still tasted good!! That was a great combination…the pineapple juice and coconut milk!!

Here’s a quick tip if you are going to make your own Ice Pops: once they have had a chance to freeze, take a large bowl of warm water (the bowl needs to be big enough that you can submerge your Ice Pop mold up to nearly the rim), submerge your Ice Pop mold, count to 30 and then take out. Your Ice Pops will come out nice and pretty.
We had the chance to experience the Andre Brut and it had such a sweet, crisp flavor. It paired perfectly with our ice pops!! Truly taking our bubbly to an EPIC place. You know just because we are both epic people in real life anyway. We need our bubbly to be epic too! 😉
