Hey again! It’s Cathi from over at Cherry Blossom Kitchen back with another healthy, seasonal recipe idea that is full of all kinds of deliciousness for a hot summer treat! You know how well cantaloupe and prosciutto go together? Well, I’m adding fresh mozzarella, basil leaves and grape tomatoes and sliding them onto a skewer for a fun appetizer, snack, or light lunch. The tasty combination of sweet cantaloupe, salty prosciutto, creamy mozzarella, juicy tomatoes and fresh aromatic basil leaves is a beautiful party of colors, flavors and textures!
½ cantaloupe, seeds removed. Use melon baller to form into balls.
6 thin slices prosciutto, cut into halves
6 small fresh mozzarella balls
6 grape tomatoes, sliced into halves
12 basil leaves
Slide tomato half onto skewer; then cantaloupe, prosciutto, basil leaf, mozzarella, prosciutto, basil leaf, cantaloupe and other half of tomato, as shown. Repeat for all skewers.
For balsamic vinegar lovers, add an optional drizzle for an additional zing!
Yields 6 skewers.
