Are you a mojito lover? This will be right up your alley. I’m a HUGE watermelon fan and the moment I thought about combining these two flavor profiles together, I knew I would have a winner. And I wasn’t wrong. This Watermelon Mojito recipe is delicious! I only wished I’d had friends over to enjoy them with me. That’s the only downfall of late night cocktail creations. LOL. I, maybe, need to rethink my cocktail creation time schedule so that I can have friends over to enjoy my creations with me. 🙂
Ingredients (Makes 1 Cocktail)
4 cups of cubed watermelon, blended smooth
10 fresh mint leaves
1/2 lime, cut into 4 wedges
1 T. agave syrup
1 cup ice cubes
1 1/2 oz. white rum (or light rum)
Club Soda
Directions
Choose your favorite glass. Add in your mint leaves and 1 wedge of lime. Muddle together. Add 2 more lime wedges and agave syrup. Muddle together. Fill glass with ice until it’s nearly full. Add in rum. Fill glass halfway with club soda. Fill remaining glass with watermelon puree. Stir well and taste. Add more agave syrup if needed. Garnish with a lime wedge. Enjoy!
