This fun summer cocktail is in partnership with Llano Estacado. All opinions are my own.
It’s summer time!!! Y’all – I love creating cocktails. I’m sure you’ve figured that out by now if you’ve been a reader around here for any length of time. Moonshine Recipes – yep! I’ve got several. Regular cocktails – yep! I’ve got those too! And now I’m bringing you an AMAZING Frosé cocktail. In a Watermelon boat. Oh yes I did. Read on for the recipe…it’s definitely a MUST TRY!!
Watermelon Strawberry Frosé
Ingredients
makes 2 small watermelon boats
1 – 750 ml Llano Estacado Signature Rosé, frozen in ice cube trays
1/2 cup fresh watermelon-strawberry syrup (see recipe below)
1/2 cup fresh watermelon-strawberry juice
1/2 lime, juiced
Small Watermelon, halved and flesh removed
Instructions
Place the frozen Rosé ice cubes in a blender. Add in the watermelon-strawberry syrup, watermelon-strawberry juice and lime juice. Blend till mixed. If you don’t get the consistency you’re looking for, add 1/2 cup of ice at a time until you do. Pour into your Watermelon boats. Add a straw and enjoy!!
Fresh Watermelon-Strawberry Syrup & Juice
2 cups of fresh watermelon, cubed
1 cup of sliced fresh strawberries, cut in half
1/3 cup of sugar
Blend the fruit in a blender until pureed. Pass through a mesh strainer to catch the pulp. Take 1/2 cup of the juice (reserve the rest) and pour into a small saucepan with the sugar and bring up to about a 4 to melt the sugar. Allow the syrup to come to room temperature before using. Use 1/2 of a cup of the syrup in the above recipe.
**You will have extra juice left over. Just melt some more sugar to sweeten it to your liking and enjoy some fresh juice!
