In the winter time, I typically lean towards comfort foods. And this Easy Slow Cooker Pinto Beans Recipe is a great reflection of that. It’s comfort food in a slow cooker!
Ingredients
1 lb dry pinto beans (washed, cleaned & soaked in water overnight)
1 tsp. chili powder
1 onion, diced
1/2 tsp dried oregano
1/2 lb. ham hock (soak in 4 cups of water overnight)
4 cups of ham-hock soaked water
Paula Deen’s House Seasoning, to taste (recipe below)
Directions
Dump the Pinto Beans into your Crock Pot.
Add in the chili powder and dried oregano and stir to combine.
Add your ham hock into the beans, including the ham hock water.
Add more water until the ham hock is completely submerged in water.
Add in the diced onions and stir to combine (but make sure the ham hock stays under water!)
Season to taste with the House Seasoning.
Cover the pot and cook on high for 6 hours. In the final hour, remove the lid to let some of the water evaporate, if you want your beans to be less soupy.
Serve with your favorite side item. I made some cornbread for mine. You can sprinkle some more diced onions on top, some diced jalapenos, maybe even a dollop of sour cream. Enjoy!
House Seasoning Ingredients/Directions
1 cup of salt
1/4 cup of ground black pepper
1/4 cup of garlic powder
Combine all of the ingredients and store in an airtight container. Good for up to 6 months.
