This post is in partnership with Rico’s Popcorn. All opinions and stories are 100% my own.
Let’s talk pickles and popcorn for a second, shall we? I cannot even recall how long I’ve been eating pickles and popcorn together but it’s something that goes hand-in-hand for me like PP&J. It’s one of those pairings that I can’t have without the other. Especially at the movies. I usually have to bring my own pickles (shhhh don’t tell!) because I do not like movie theater pickles…blehhhhhhhhhh. Gross. ha! I think I must be a pickle snob or something. Anyways…let’s get back to this Pickle Pop Martini because that’s why you are really here…either because you are super curious about this cocktail or you are super curious about why this cocktail. Either way…let’s get to the good stuff.
So this Pickle Pop Martini is inspired by my love for pickles and popcorn. And also my love for pickle shots. But I was going for a more classy cocktail than just a one time shot situation. Meet the Martini you didn’t know you needed in your life. Especially if you like dirty martinis. Pickle juice and vodka and a frozen pickle for garnish with a crushed popcorn rim and you are in savory martini heaven. Just don’t forget an actual tub of popcorn because that’s how this beverage should really be enjoyed! Movies will never be the same again!
Pickle Pop Martini
Serves 2
Ingredients
3 oz Pickle Juice
3 oz Vodka
2 cups ice
Frozen pickle, for garnish
Rico’s Butter Popcorn, crushed, for rimming
Rico’s Butter Popcorn, for garnish
2 oz. pickle juice, for rimming
Directions
Skewer a couple of pickles and place in freezer for about 30 minutes to get them nice and cold.
In a mini food processor, crush up some Rico’s Popcorn, to use for the rim of the martini glasses. Pour onto a small plate.
Pour the 2 oz of pickle juice on a small plate. Dip your martini glasses in the pickle juice to wet the rims.
Then dip your martini in the crushed popcorn to coat the rim.
In a cocktail shaker, add the ice, pickle juice and vodka. Shake for 30 seconds. Then carefully pour into your martini glasses.
Garnish with your frozen pickle (and skewer a couple of pieces of popcorn on top!).
Enjoy!!
Don’t forget to grab a bag of popcorn to enjoy with your Pickle Pop Martini!
If you aren’t familiar with Rico’s popcorn, it’s definitely a brand you need to check out! Their popcorn is air-popped and sprayed with flavor. And it’s absolutely delish! I’ve already chowed down through a bag by myself. LOL With pickles of course! Rico’s Popcorn comes in 4 flavors: Simply Salt, Butter, Cheddar and White Cheddar.
If you are in Texas, you can find Rico’s right on the grocery store shelves! I grabbed mine from my local HEB. Check out where you can buy it by visiting their website.

O.M.G. I have to share this with my girlfriend…she literally just did a quiz asking people if they would drink a pickle slushy and I voted a resounding YES!!! I love this so much! White Cheddar and pickles sounds fab.
