Happy January! Don’t you just love starting a fresh new year? I’m looking forward to new beginnings starting with being extra mindful of what I eat, and scheduling my workouts so I don’t miss them! Choosing seasonal fruits and vegetables is a good way to improve a healthy eating plan, and you’ll be rewarded with high quality produce that’s packed with nutrition at a lower cost. Your taste buds will definitely thank you for it! This time of year, pears and pomegranates are in season and very delicious, so, I’m putting them together in this beautiful salad of amazing textures and colors!
Pear and Pomegranate Salad with Crumbled Gorgonzola
Ingredients:
8 oz baby spinach spring mix
2 Bosc Pears, cored and sliced
1 pomegranate, arils removed
¼ cup gorgonzola cheese, crumbled
¼ cup sliced almonds, toasted
White Wine Vinaigrette:
¼ cup extra virgin olive oil
1 tbl white wine vinegar
1 tsp agave nectar
1 tsp Dijon mustard
Salt and pepper to taste
Directions:
Arrange greens, pears, pomegranate arils, cheese and almonds on a platter or individual plates.
Place all vinaigrette ingredients in a salad dressing shaker or jar, and shake until well blended.
Drizzle dressing over salad.
Enjoy!
