Hi! I’m Kathy from Penney Lane Kitchen where I share easy recipes and our family adventures. I’m a fellow Texas girl like Taylor and I’m so excited that I will be sharing a simple recipe with you each month here on Pink Heels Pink Truck.
Since we are at the height of grilling season, I thought I would share a twist on one of my favorite things to grill- burgers! I grew up on the Texas/Louisiana border and Cajun food was a huge influence on our family’s cooking and it still is for me today. Cajuns know how to cook and have a good time.:-) Burgers are super easy to assemble and they’re also easy to grill so this would be a great lunch or dinner for a summer cookout- plus it’s full of wonderful Cajun zesty flavor. This recipe was inspired by my cookbook from one of my favorite shows- Chopped. (I’m a bit of a Food Network addict!)
Ingredients:
1 pound 80/20 ground beef
2 Tablespoons Tony Chachere seasoning
3 scallions diced
1/2 cup Mayonnaise
2 Teaspoons Creole Mustard (Can sub Dijon if you don’t have Creole)
1 Teaspoon Tobasco
1 small Vidalia or Purple Onion Sliced into rings
1 Tablespoon vegetable Oil
4 sesame seed buns
Instructions:
Preheat your grill to a medium-high heat.
Mix the ground beef, scallions, and Tony Chachere in a medium bowl.
Use the ground beef mixture to form 4 patties.
Make the homemade Cajun Remoulade by mixing the mayo, Creole Mustard, and hot sauce in a small bowl. Place in the refrigerator until the burgers are ready.
Grill the burgers to desired doneness. Coat the Vidalia onions with the vegetable oil and grill for about 5 minutes until char marks are visible. You can also toast the buns if desired.
Serve the burgers with the homemade Remoulade and buns and enjoy!
I paired them with sharp cheddar cheese that went great with the sweet onions and the kick of the burger patties. They’re easy to do, full of flavor, and sure to be a hit at your next cookout!
See you next month for more easy deliciousness or you can stop by Penney Lane Kitchen and check out this Southwest Chipotle Burger for another tasty idea for the grill.

This looks amazing! We only have a BBQ to cook on here so burgers are very popular and it’s great to have recipes that change up what I cook a bit!
