This super easy chili recipe has been in my family for as long as I can remember. It was originally my grandmother’s recipe and then my dad took hold of it and added a little bit of spice to it and well…it’s just chili perfection in my opinion. Every time the weather starts dipping into the cooler temps, this is my go-to cool weather recipe.
You can cook this in a large skillet or a dutch oven. If you go the skillet route, I recommend finishing off in a dutch oven. If you don’t have a dutch oven, make sure you have a lid that fits your skillet so that when it’s simmering, it can simmer covered. I’ve cooked it both ways…large skillet and dutch oven…and this go around, I started off in a skillet and finished off in my new Lodge Enameled Cast Iron Casserole Dish. It’s 2.5 quarts…perfect for this chili!
Easy Chili Recipe
Ingredients:
1 T. canola oil
1 medium onion, diced
4-5 cloves of garlic, minced
1 lb. lean ground beef
1 T. ground cumin
1 T. chili powder
1 can of Rotel
1 can Stewed Tomatoes (just the regular size can)
1 can Kidney Beans (just the regular size can…I use dark kidney beans.) (optional)
squirt of ketchup
salt and pepper
fritos
shredded cheese
corn bread (optional)
Directions:
1. Heat a large skillet or dutch oven over medium heat. Add 1 T. oil to the skillet/dutch oven and let it heat up.
2. Once the skillet/dutch oven is hot, add the ground beef. Season a bit with salt and pepper. Cook until meat is browned.
3. Remove from the pan.
4. Add another 1 T. of oil and let it get hot.
5. Add the onions and garlic to the skillet/dutch oven. Cook until the onions are translucent, 3-5 minutes.
6. Add the meat back to the skillet. Combine the meat, garlic, onion mixture together.
7. Lower heat to Low/Simmer.
8. Add in the spices: cumin and chili powder. Combine really well.
9. Add the rotel, tomatoes, kidney beans and a squirt of ketchup. Combine.
10. Transfer to dutch oven if you have one to finish cooking, if not, just add your lid to your skillet.
11. Cover and simmer for 30 minutes.
**Taste after 15 minutes to see if you need more salt or more ketchup.
Enjoy with fritos and cheese! Or cornbread!

I love a good, quick chili! I use prepared salsa in mine instead of Rotel. I love the added flavor. I usually make cornbread to go with it, but your Fritos look pretty tasty!
